Honeycomb

Just sugar, golden syrup and a little bicarb – how can such simple ingredients produce such complex flavours and textures? We cook our honeycomb a little longer to give it an edge of caramel bitterness. Creates quite a reaction when stirred through ice cream.

Different parts of the country lay claim to this confection with differing names, such as cinder toffee in some parts of England, puff candy in Scotland and Yellowman in Northern Ireland.

Ingredients: Sugar, golden syrup, raising agent E500(ii) sodium bicarbonate.
